Most “boring” subjects get interesting once you learn who fought over them and why.

Subjects feel dead when they arrive as settled conclusions, which is how most of them arrive. Every one of them was an argument first. Somebody proposed something and was mocked for it, somebody staked a career on being right, somebody lost. Once you can see the fight inside the material, it stops being a list and starts being a story with people in it.
Take the class you find flattest and look up one dispute from its history. Who disagreed, what was at stake for them, how it got settled. Bring that to your next lesson and see whether the topic reads differently.
