Doing a great deal with very little takes planning, timing and improvisation, all at once, every week. That is skilled work, and it goes uncounted because it happens at home and nobody issues certificates for it. The people doing it are usually the last to call it a skill. It transfers directly to almost any job involving limited resources.

Name what you actually do when you stretch something thin: forecasting, substitution, scheduling, negotiating. Say it to yourself in those words. When the time comes to describe your experience, that work belongs in the description.
