Everyone is running a life as detailed as yours, with a history you have no access to and at least one chapter that would rearrange your impression of them. The default is to reduce strangers to their function: the person at the desk, the neighbour, the one who is always late. That reduction is efficient and almost always wrong.
Ask one person something beyond their role this week, and mean it. How did you end up doing this, or what were you doing before. Then wait, because the interesting part usually comes after a pause.
