A sweater is just a few thousand rows of not quitting.

Anything substantial is made of a large number of identical small acts, none of them interesting on its own. The finished thing looks like a single achievement when it was actually an accumulation, and the accumulation was mostly a matter of continuing on days when none of it felt significant. Persistence is the raw material.

Count rows instead of measuring the whole garment. Decide how much you can do on an ordinary day and do that amount, especially on days you would rather not. The total takes care of itself as long as the rows keep happening.
