Pressure to decide quickly usually serves whoever is applying it. A good offer survives a night, and anyone who insists otherwise is relying on your judgement being worse in a hurry. The urgency is a tool, and once you see it as a tool it loses most of its force.

When somebody starts counting down, say plainly that you need until tomorrow. Watch what happens to their manner. If the offer evaporates because you asked for a day, you have just learned what it was worth.
