Dough that proofs too long collapses in the oven. More time isn’t always better. The right time is.

STILLNESS

WHAT THIS MEANS

More of a good thing is not automatically better, and some processes have a window rather than a direction. Dough needs enough time to rise and not so much that the structure gives out, and the baker’s whole skill is reading which stage it is at. Plenty of other things work that way: studying, resting, rehearsing the same speech. Right amount is a harder target than maximum.

Find the thing you tend to overdo and put a limit on it this week. Two hours of revision rather than five, or one more take rather than nine. Then check the result honestly and see whether less was actually worse.
