Cooking with your family is how recipes turn into inheritance.

GRATITUDE

WHAT THIS MEANS

Recipes are less a set of instructions than a way one generation hands the next something it can keep using. Nobody writes down how much a handful is, or when the onions look right, so those parts only transfer while you are standing there watching. Learn the dish and you are carrying a piece of the people who taught it forward with you.

Ask somebody in your family to make the thing with you, not for you, once this month. Write down what they do that is not in the recipe. Being able to cook it later is how they stay in the room.

A QUESTION TO SIT WITH

Which dish could you cook without anyone writing it down?
