Usually it begins because you had it that day and they did not. Then it quietly becomes the pattern: the small spots, the covered tickets, the gas nobody splits. You end up funding the group and feeling strange about mentioning it, because raising money in a friendship makes you sound like the difficult one.

You can stop without a speech: I am out this month, or I can only cover mine. Use the same tone you would use for anything else. The real friends will be completely fine, and whoever gets annoyed has just shown you what that part of the friendship was running on.
