A real friend notices when your “I’m fine” sounds different than last time.

Everybody says they are fine. The information is not in the words but in the delivery, and picking it up requires knowing the usual version well enough to hear a change. That kind of noticing only comes from paying attention over time. Being noticed in that way is one of the better things available to a person.
You can do it for somebody this week. If a reply sounds flatter than normal, say that it sounded different and leave a gap rather than pressing. And if someone asks you twice, consider giving them the real answer, because they are telling you they noticed.
